Napa Valley
California’s best-known wine region hangs its hat on fine Cabernet Sauvignon and Merlot. So it’s no surprise that this is where Hayman & Hill seeks out its Cabernet Sauvignon and Merlot grapes. The rocky alluvial soils and the long growing season create dark, concentrated fruit. Napa’s soils and microclimates create the distinctive varietal character for which this appellation is most renowned.
Russian River
It is the summer fog that helps make the Russian River region produce fine cold-climate varieties including Chardonnay. The river winds its way through western Sonoma County to the Pacific Ocean. Warm days and cool, foggy nights make the region an exceptional area for creating rich and complex Chardonnay.
Monterey County
The Santa Lucia bench in Monterey’s cool Salinas Valley is an emerging cool-climate wine-producing region. Situated on the west side of Salinas Valley, the region consists of an east-facing, gently sloping set of protected foothills. The cool breezes from the Pacific Ocean provide one of the longest growing seasons in all of California. The sandy loam soils are well-drained, producing fine Rhone varietals such as Shiraz and Viognier that go into the Hayman & Hill Shiraz/Viognier blend.
Santa Lucia Highlands
Over the past few years, the Santa Lucia Highlands sub-appellation, located in Monterey’s cool Salinas Valley, has exploded onto the scene as a star among emerging cool climate wine regions. The Santa Lucia Highlands has been lauded as one of the most significant new districts for the production of Pinot Noir. Located on the west side of the Salinas Valley, this region consists of an east-facing, gently sloping set of protected foothills. Like many superb Pinot Noir sites, the sandy loam soils are shallow and well drained. The cooling maritime influence from the Pacific Ocean at the northern mouth of the valley is profound, providing one of the longest growing seasons in all of California.
Dry Creek Valley
The warm hillsides have long been planted to Zinfandel, and Hayman & Hill believe these grapes produce the finest expression of this Californian grape in the state. It is a perfect match of grape, soil, microclimate and growing conditions. The valley, located about an hour north of San Francisco runs parallel to and west of Alexander Valley.
Santa Barbara County
Leisurely drives through Santa Barbara are always inspired by ocean vistas and the patchwork of steep mountains and fog-shrouded valleys. Vineyards thrive in the soil and so did our vision to blend the finest white wines of the region. Our interchange of winemaking and perfect climate delivers a rich wine with pineapple, citrus and vanilla notes.
Columbia Valley, Washington
Our quest for the finest Riesling took us to Washington. We drove east, away from the rain clouds, over the mountains to Columbia Valley. The slow and steady ripening conditions allow us to craft our ideal wine – subtle pear and floral aromas with a hint of sweetness, and a crisp finish that is beautifully balanced.
