Vitification
The fruit for this fresh new label was sourced from our coastal vineyards, predominantly from the Wairau and Awatere Valley regions within Marlborough. The Awatere Valley vineyards lie on stony, free draining, light clays and are exposed to cold, easterly, atabatic sea breezes that alternate with warm to hot north westerlies. This devigorating wind and cold produces less foliage growth and smaller berries, with increased flavour concentration. Meticulous vineyard practices of leaf plucking and shoot thinning were employed to maximise sunlight penetration of the canopy and achieve optimum ripening. All of our Marlborough vineyards are accredited by Sustainable Winegrowing New Zealand, with our viticulturalists following best practices for the environment in their vineyard management. These practices ensure we produce grapes of the highest quality, while maintaining New Zealand's clean, green lands.
Vinification:
The grapes were harvested in April and the fruit was lightly crushed, before being cold soaked for six days, a practice encouraging colour extraction from the skins. A small percentage of the blend was fermented naturally using indigenous yeasts and the balance of the blend was inoculated with cultured yeasts. Throughout fermentation the wine was pumped over the skins three times per day to increase extraction of colour and tannins. The wine then underwent post fermentation maceration for seven days, a technique employed to stabilise the colour and soften the tannins. After maceration the wine was racked and pressed into a mixture of new and seasoned French oak barriques for malolactic fermentation and nine months maturation on yeast lees. The final blend underwent cold stabilisation, fining and sterile filtration prior to bottling.

Vitification
The fruit for this exciting new label was predominantly sourced from our coastal vineyards in the Awatere Valley region of Marlborough. The Awatere Valley vineyards lie on stony, free draining soils and are exposed to cold, easterly, atabatic sea breezes that alternate with warm to hot north westerlies. This devigorating wind reduces foliage growth in the vines, creating smaller berries with increased flavour concentration. A greater intensity of herbaciousness and 'racy' fruit characters appear to be directly related to the region's longer growing season, and the ability to 'hang' the grapes on the vines late into the harvest period.
Vinification:
Harvesting was carried out in the early hours of the day to ensure the grapes were cool during processing. The grapes were crushed to drainers, where the juice was given several hours of skin contact to aid in the extraction of fruit flavours. Fermentation was carried out exclusively in stainless steel tanks, using white wine yeast selected for its contribution to the complexity of both aroma and mouth feel. Post fermentation, the wine remained on yeast lees for several weeks prior to racking, blending and clarification. The final blend was lightly fined prior to bottling.
Color:
Pale straw with green hues and brilliant clarity.
Aroma:
A fresh, lively bouquet of passionfruit and melon with ripe herbal overtones.
Palate:
The Jibe Sauvignon Blanc is a reflection of New Zealand's vibrant coastal climate, with youthful, refreshing fruit characters overlaying a structure of fresh, racy acidity. Ripe tropical flavours are layered with fresh herbal qualities, while delicate yeast lees influences add weight and complexity to the palate. The finish lingers crisp and dry in a perfect blend of flavor and acidity.
